Parsnip and Baked Apple Soup

I came across this recipe last week when looking through Tamasin Day-Lewis' book "Good Tempered Food" and tried it out on the Husband. He raved about it and said it was really delicious and when was I going to make it again. Soon, dear. It is easy to make too.


Parsnip and Baked Apple Soup
1 small onion, peeled and finely chopped
750g parsnips, peeled and diced
1 large cooking apple
2oz butter
1.2 litres chicken or vegetable stock
6 sage leaves
salt, pepper, parsley leaves
  1. Score the apple around its circumference, core it and bake it in a dish with about 1/2 inch water and NO sugar. Bake in a hot oven until tender right through.
  2. Sweat the onion and parsnips in the melted butter for 10-15 minutes with some seasoning. Then pour on the stock and sage and simmer until tender. Fish out the sage leaves. Peel the baked apple and add it to the mixture. Liquidise until smooth. Check the seasoning and add some chopped parsley and a little cream if you wish. Serve.

You've done it, Val. You've come up with one of the few recipes in the world that I shall never try. The scent of parsnips cooking is enough to send me around the bend. Thanks for sharing, though!

Cop Car,

You must be joking! Parsnips are one of the best vegetables around. I love them roasted and also in this soup. They will form pert of our Christmas dinner coated in parmesan and roasted. Excellent!

Parsnips are a vegetable that my father loved. The smell of cooking parsnips made me nauseous. As we were desperately poor, Dad forced me to partake of parsnips. Predictably, my stomach rejected them.

To his dying day, Dad loved parsnips. Since that one, last time I have not eaten them. Hunky Husband has a similar aversion to stewed tomatoes. As food was scarce in his childhood and his father forced HH to eat stewed tomatoes, he does not now eat them.

P.S. There is no food other than parsnips that I reject out-of-hand.

Fascinating. I don't think I've ever cooked or eaten a parsnip, and my Scottish friend teases me mercilessly about it.

This soup sounds wonderful on paper, but Cop Car's comments have me worried. Still, I may give it a try, simply because we need to continue to expand the vegetable base of our diet.

The roasted parsnips with Parmesan sound good. Maybe I'd like them better.

Parsnips are sweet in taste and they, like this soup, are really delicious.

I'll post the troasted parsnips with parmesanlater. At the moment I'm about to make another batch of this soup.
